• ½ Chicken: 12:00 PM

• Ribs (with Mama Mo’s Sauce): 1:30 PM

• Brisket: 3:00 PM Awards Ceremony: 5:00 PM

🍖 Competition Categories

• Brisket – Bold bark, deep flavor

• ½ Chicken – Juicy, smoky, full of character

• Ribs – Must be presented with a Mama Mo’s Sauce product (provided or pre-approved)

📝 Registration Details

• Team Size: Up to 4 members

• Age Requirement: All cooks must be 18+

• Max Teams Allowed: 50

• Early Bird: $125 (Aug 21–Aug 31)

• Standard: $150 (Sept 1 until deadline) Includes entry into all 3 categories

🚨 Registration & Refund Policy

• Mama Mo’s is not responsible for any third-party registrations or scams The only place to register for this event is here. 

• No refunds – All registration fees are final

• Rain or Shine – Event will proceed regardless of weather

• In case of severe weather, the event will be rescheduled

• Information & rules are subject to change – All teams will be notified of updates

🔥 Cooking Rules

Meat Inspection & Prep: Time TBD  Cooking Start Time: TBD (official horn blast)

• No pre-cooked, injected, or seasoned meats

• All cooking must be done on-site

• Approved methods: wood, charcoal, pellet, propane

• Electric starters allowed for ignition only

• No electric heat sources for cooking

📦 Turn-In Guidelines

All entries must be submitted in provided containers. No garnishes, markings, foil, or pooling sauces. Lid must close completely.

Brisket

• 7 full slices, ¼"–⅜" thick

• Accordion-style, horizontal layout

• Include both ends of the brisket

½ Chicken

• One whole half, cut in half

• Skin on, meat side up

• Wingtips optional

• Must fit with lid closed

Ribs

• 7 individually cut pork spareribs

• Bone-in, fully separated

• Accordion-style, horizontal layout

• Sauced with Mama Mo's of Choice (one bottle will be provided to each team)

🎯 Conduct & Safety

• Respectful behavior and sportsmanship required

• Fire extinguishers must be present at each pit

• Alcohol permitted in moderation (no glass containers)

• Teams must clean their area before departure

• Trash stations available throughout venue

🛡️ Health, Safety & Sanitation Guidelines

• All teams must follow Texas Health Department regulations for temporary food establishments and outdoor BBQ pits. These rules are in place to protect participants, guests, and the integrity of the cook-off.

• Required Practices:

• Handwashing Station: Each team must have a handwashing setup at their cooking site. This includes:

• A container with a spigot for flowing water (not just a spray bottle)

• Soap

• Paper towels

• A catch bucket for wastewater

• Sanitization Station: Teams must provide their own cleaning area for wash, rinse, and sanitizing utensils and surfaces.

• Food Handling: All meat must be raw at check-in. No pre-cooked, pre-marinated, or pre-seasoned items allowed.

• Overhead Protection: If food prep occurs outside of the pit, teams must have a canopy or tent to protect food from contamination.

• Pest Prevention: Keep food covered and stored properly to prevent exposure to insects or rodents.

• Cleanliness: Cooking areas must be kept clean and organized. Trash should be bagged and disposed of at designated stations.

• Inspection Compliance: Cooking conditions are subject to inspection. Any violations must be corrected immediately or may result in disqualification.

• Note: These guidelines are based onTexas DSHS BBQ Pit Requirements and standard cook-off protocols. Mama Mo’s reserves the right to enforce additional safety measures as needed.

 

🏕️Team Space Allocation

Each registered team will be assigned one designated cooking space.

• Space size will be determined closer to the event date based on the total number of teams, venue layout, and safety requirements.

• Teams must keep all equipment, tents, and prep areas within their assigned footprint.

• Shared areas for trash disposal, handwashing, and socializing will be available nearby.
